- DescriptionProducer The Romano Levi distillery originates in the small village of Frasciscio di Campodolcino, located in a valley not far from the Splügen pass on the Swiss border. Romano Levi is considered the last distillery in the world to distil directly over an open fire. The fresh grape pulp for the production of grappa has always been supplied by the renowned winegrowers of the region, including the Piedmontese legend Angelo Gaja. The renovated distillery, which is listed as a historical monument, still practices single-pass distillation. Ro-mano Levi, who died in 2008, designed the labels for the grappa produced in very small quantities. Production process This grappa is produced by single batch distillation on an open hearth. After a short maturation period of 6 to 8 months, it is flavoured with camomile through a maceration of 3 to 4 weeks. Finally, the grappa is filtered according to a method developed by Lidia Levi, which ensures an optimal aromatic result. Raw material and origin Nebbiolo from the Barbaresco region, Dolcetto d'Alba and Barbera d'Alba are used to make this grappa. Tasting The first nose is rather floral, followed by fresh herbs and chamomile. Smooth and flattering on the palate, with an aroma of chamomile.
