    The Dauphiné region accounts for a large proportion of French walnut production. As in most walnut-growing regions, there is a family tradition of macerating green walnuts picked on Saint John's Day, either in wine (vin de noix) or brandy (eau de noix). The Carthusian monks, on the other hand, extract the fruit and then distill it, which gives this nut its distinctive character.
