    With the Paleo, Cinzia Merli demonstrates that a single-varietal Cabernet Franc in Tuscany near the sea produces excellent wine - more exciting and refined than the widespread Cabernet Sauvignon. While the Cabernet Franc grape often struggles to ripen regularly in more northern growing regions such as the Bordelais, the variety finds ideal conditions here in the dry, sun-drenched Alta Maremma. This circumstance encouraged Cinzia Merli to focus entirely on this grape variety and to graft her Cabernet Sauvignon vines. Today, the grapes come from the Puntone (1993), Casa Nuova (1998) and Madonnina (2002) sites. The maceration lasts about 20 days, after which the wine is aged for 14 months in barriques (3/4 new wood, 1/4 second filling). The Paleo is one of the few single-varietal Cabernet Franc wines of significance worldwide. All relevant Italian and international wine critics give this unique wine their highest marks.
