Yeast
It is a microscopic ferment which is made by budding. It converts the sugar of the wort into alcohol and carbonic acid. Each brewery designs and maintains its own yeast and keeps its features secret, as the quality and variety of the yeast determine the character of a beer to a high extent. Note that brewer’s yeast is exceptionally rich in vitamins.
