    The pleasure of tasting Yquem is a delicate sensation to express. Yquem is harmony in the complexity of flavors and aromas, a harmony that evolves, whose constituents melt to give birth to other balances, to new harmonies over time. The impression left by the tasting is reminiscent of Frédéric Dard's quote "to the silence that follows Mozart, that is still Mozart". After its tasting, Yquem spares this moment which is still Yquem. There is also a nice expression to describe a wine that has a very long finish: it is said to have a peacock's tail.
