Description
Situated in the legendary Tokaj-Hegyalja region, the Pajzos estate has held the distinction of ‘Premier Cru Classé’ since 1772. Over the centuries, its wines have been prized by European emperors and monarchs. The Tokaj vineyard was operated by a single company, owned by the Hungarian state from 1948 to 1991, when Jean-Louis Laborde acquired the Pajzos estate and undertook to replant the 64 hectares of vines. The Laborde family also owns Château MEGYER in Tokaj and the prestigious CHÂTEAU CLINET in Pomerol. This great wine is produced using a traditional method. The ‘Aszu’ grapes, sorted berry by berry and harvested by hand, are transported in a Puttony, a basket used as a unit of measurement. They are classified on a scale of 4 to 6 Puttonyos. The higher the number of Puttonyos, the higher the wine’s sugar content. 1 Puttony corresponds to 20 kg of botrytised grapes added to 100 litres of white wine. After macerating for several hours, the mixture is gently pressed. The wine is then aged for two years in Hungarian oak barrels. This unique process produces a refined wine with distinctive aromas and excellent ageing potential
